Yellow Basmati Rice

This is a very light but fragrant rice.


  • 1  cup Basmati rice
  • 3  tablespoons olive oil
  • 1  (14 oz) can roasted garlic chicken broth (or regular chicken broth)
  • 1  finely chopped small onion
  • 1/2  cup red bell pepper, finely chopped
  • 1/2  cup green bell pepper, finely chopped
  • 3 garlic cloves, finely chopped
  • 1/2  teaspoon crushed red pepper flakes
  • 1/4  teaspoon turmeric
  • 1/2  teaspoon salt
  • 1/2  teaspoon cayenne pepper
  1. In a large skillet, cook onions and bell pepper in olive oil about 5 minutes.
  2. Add chopped garlic, continue cooking about 5 minutes.
  3. Add rice and cook 2 more minutes.
  4. Add roasted garlic chicken broth, and remaining seasons.
  5. Cover and simmer for about 15-20 minutes.
Twist:  Used Turmeric in place of saffron.  Turmeric which has became known as Indian saffron is widely used as an alternative to the expensive saffron spice.
