Can a Sunday dinner get better than, Cornish Hens, Purple Hull Peas and Cornbread?

Purple Hull Peas


  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/3 cup canola or vegetable oil


Preheat oven to 425 degrees F.
In a medium size bowl, add dry ingredients.
Add milk, eggs and oil; mix well.
Pour mixture in a greased cast iron skillet.
Bake for 20 to 25 minutes.

Twist: Bake your cornbread in a cast iron skillet.
