This is a very easy and delicious dish. Make sure that you have French bread on hand to dip in the scrumptious wine sauce. Enjoy!


  • 1 pound mussels, cleaned
  • 1/3 cup flour
  • 1 large shallot, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1 teaspoon crushed red peppers
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup white wine
  • 14 oz. can tomatoes in olive oil and roasted garlic, diced (use half of the can)


  1. Scrub mussels to remove dirt and slime.
  2. Use a knife to scrape off the beard.
  3. Stir flour in water (about 2 quarts), and add mussels.
  4. Let them soak for about 30 minutes in flour water to allow them to disgorge the sand.
  5. Do not use any mussels that are not closed.
  6. Add butter and olive oil to a large pot.
  7. Add shallots and garlic; until cook until shallots are translucent.
  8. Add tomatoes, thyme, crushed red peppers and white wine.
  9. Cook for about 5 minutes over medium heat.
  10. Add mussels cover with a lid.
  11. Cook until shells open.
  12. Remove the mussels from pot and place in a bowl.
  13. Spoon the sauce over the mussels.
  14. Serve with French bread.

Twist: Tomatoes with roasted garlic and olive oil and crushed red peppers.
