Potato Chicken Sausage Frittata

Frittatas are so good and simple to make. They are an easy version of omelets. Consider making one for a brunch. 






    • 3/4 lbs. Chicken Sausage w/Spinach and Feta Cheese (removed from casing)
    • 4 medium-size potatoes, diced
    • 1/2 cup green onions, chopped (include some of the tops)
    • 8 large eggs, beaten
    • 3 tablespoons milk
    • 3/4 cup freshly grated Parmesan cheese
    • 1 teaspoon Cajun seasoning
    • 1 teaspoon hot smoked paprika
    • 1 teaspoon salt
    • 2 teaspoons canola oil
    • 2 teaspoons minced fresh parsley
  1. Preheat oven to 350 degrees F.
  2. Add canola oil to a medium-size skillet.
  3. When oil is hot, add potatoes.
  4. Add green onions, after the potatoes have cooked for about 5 minutes.
  5. In the meantime, cook chicken sausage over medium-heat in a small sauté pan.
  6. Cook potatoes until almost fork-tender.
  7. In a medium bowl or large measuring cup, mix eggs, seasonings, milk and parmesan cheese.
  8. Spread potatoes and chicken sausage in the bottom of an oven-proof casserole dish.
  9. Pour egg mixture over potatoes and sausage; place in the oven.
  10. Bake the frittata until it puffs and a knife inserted in the middle comes out clean (about 20 minutes).

Twist: Chicken Sausage w/Spinach and Feta Cheese, hot smoked paprika.
