Very Moist Banana Bread

I love Banana Bread and I also love pumpkin seeds, to me they’re a perfect pair!



 









Ingredients:

  • 1 cup Canola oil
  • 1/4 cup butter
  • 2 cups sugar
  • 4 eggs
  • 6 large ripe bananas, mashed
  • 1 cup golden raisins
  • 1/4 cup sour cream
  • 2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons soda
  • 1/2 teaspoons cloves
  • 2 teaspoons cinnamon
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 3 – 4 tablespoons pumpkin seeds

Directions:

1.   Preheat oven to 325 degrees F.
2.   Cream butter and sugar; add eggs.
3.   Add oil and vanilla extract, mix well.
4.   Combine sifted flour, and other dry ingredients.
5.   Add to cream mixture.
6.   Add sour cream and mashed bananas.
7.   Toss raisins in a little flour.
8.   Add raisins and walnuts.
9.   Grease and flour 2 loaf pans, divide batter between the two pans.
10.   Bake for 1 hour.
11.   During the last 25 minutes of baking, sprinkle pumpkin seeds over banana bread.

Twist: Vanilla extract, sour cream and pumpkin seeds.
